The Prickly Poppy Bakery is a custom bakery based in Lake Highlands in Dallas, Texas.  Owned and operated by Pastry Chef Erin Van Kirk, The Prickly Poppy specializes in custom cakes and designer desserts. Every creation is handmade with the same pride and attention of any good Southern home cook, combined with the expertise of a trained chef.  That means you can be sure you are getting both quality and perfection with every unique order.

Pastry Chef Erin Van Kirk was professionally trained at the Le Cordon Bleu College of Culinary Arts.  She has held positions at the celebrated Georgetown Cupcake (of the hit TLC reality show "DC Cupcakes"), Oak Cliff's beloved Bolsa and Bolsa Mercado, and Dallas' favorite brunch spot Breadwinner's Cafe .  

Erin opened The Prickly Poppy in July of 2013 with the goal of creating expertly crafted edible works of art.  Erin takes pride in using only quality ingredients and making everything fresh from scratch so that every customer gets exactly what they want. 

Erin's work at The Prickly Poppy combines the influence of the great chefs she has had the pleasure of working with, as well as recipes passed down through family tradition (cause sometimes Grandma just knows best!).
